Researching recipes from online sources which boast energy rich diet plans...
Oatmeal Cookies
Chicken and Watercress Salad with Almonds and Feta
Asian Noodle Salad with Shrimp
Black Bean and Rice Salad
Vegetarian Burrito
Vegetarian Lasagne
Warm Chickpea Salad
Spinach enchiladas
Fish Cakes
Chicken and Vegetable Stir-Fry
Just a few ideas of the sort of lunchbox fillers that could be quickly and easily produced. Definately more research required, and creating my own personal meal plans...need to get my nutritionist's hat on.
OTHER POINTS TO CONSIDER:
-time it takes to cook/prepare (busy lifestyle= 30 minutes tops.)
-ingredients needed (sitting at a desk all day=no excercise=not enough beef=unable to carry multiple shopping bags at once)
-affordability (for a student budget!)
-preserving (can you freeze/refridgerate it? yes- you're in)
-allergies/diets (need to cater for EVERYONE- vegetarians, vegans, lactose intolerant, wheat intolerant, etc, etc.)
